I attended the Gluten Free Allergen Free Expo this past weekend in New Jersey and had a chance to taste some of the products from Way Better Snacks.  I have to say that I love all of their chips.  I have had the Sweet Potato Chips before and I do love them, but I had a chance to try their name seasonal chips and they were delicious.  I tried the new Punkin Cranberry Chips .. they had such a nice flavor to them, but I wish they had sample bags of those to take home too.  I will definitely be looking for these next time I'm our shopping.

These chips definitely live up to their name.  They are made Way Better then the conventional chips.  Not only do they taste amazing, but they use clean plant based ingredients including sprouted chia, sprouted quinoa, sprouted brown rice and stone ground non-GMO corn.  Look for their new fall flavors to show up in stores soon.

What is your favorite chip or product that you tried?  I would love to hear about in the comments!

Here's a video sampling the Sweet Potato Chips!

Review of Schar Gluten Free Artisan Bread

I recently attended the Gluten Free Allergen Expo and received a sample of their Gluten Free Artisan Bread.  I loved it and thought that it held up with for toasting and would be great to make sandwiches.

The bread help up perfectly during toasting.  Many times I try gluten free bread it does not get crispy or stay firm after toasting, but this bread does very well. It also holds together when making sandwiches too.  I love the taste, especially with butter and have used in place of a bun for a burger.

They have many different types of breads and this is definitely one of my favorite.  Here's a video trying the bread!

Gluten Free Allergen Free Expo New Jersey 2015

 It is Official!

I will be attending the Gluten Free Allergen Free Expo in Secaucus, New Jersey this October 3rd and 4th.  I'm excited to be attending and can't wait to share it with you.

The Gluten Free and Allergen Free Expo is the largest expo dedicted to those are celiac, gluten intolerant or allergen free.  There are a variety of vendors and it's a wonderful chance to try new products.  They offer free classes taught by gluten free experts and it's a great chance to connect with many vendors and those living in the community who are also gluten free.
It's definitely a fun day and you will not walk away without samples, coupons and being armed with the information you need to live a gluten free life.  The best part of the event is the vendor fair.  As an attendee, you are able to sample products and will have access to purchase items, many times at a discount or receive coupons for future purchases.  These companies cater to the Gluten Free Community and it's amazing how many new products I was able to sample at last year's expo.

Follow us to see live updates from the expo and be sure to check out our review after the event when I will be sharing the vendors I see and I'll be letting you know what my favorite new products are!

How To Make Coconut Milk From Shredded Coconut

Creamy Coconut milk made from shredded coconut
Gluten free, dairy free and vegan

Coconut milk is such a wonderful alternative to cow's milk.  It has a natural sweetness and is so rich and creamy.  It goes perfect on cereal, coffee, tea and even by itself.  Many of the coconut milk's in stores are filled with preservatives, sugar and unwanted ingredients, so I prefer to make mine at home.

Making coconut milk at home couldn't be any easier and you can choose to sweeten it with whole foods like dates or berries.

Creamy Coconut milk made from shredded coconut
Gluten free, dairy free and vegan

Ingredients:

Whole Milk Consistency
1 cup unsweetened organic shredded coconut
1 to 1 1/2 cups warm water
dash of sea salt
1-2 dates (leave out for unsweetened)

Mix coconut and water together and let sit for approximately 10 minutes.
Blend together and add the rest of your ingredients.
Blend until dates have combined.
Pour mixture into a nut milk bag or cheesecloth and squeeze until you have extracted all of your milk.

Find Your Happy Place

I have a challenge for you ...

Find Your Own Happy Place ...

Let's face it, life is stressful.  We all have challenges that we face every day and there are times we just get overwhelmed.  What do I do when I am overwhelmed?  I go back to my happy place.  Sometimes I can't physically go there, but I close my eyes for 5 to 10 minutes and I imagine that I am there.  I can hear the sounds, I can feel the soft gentle breeze around me and I can even see the beautiful scene in my mind.  I feel like I am there.  Some call it meditation or relaxing, but I call it being in my happy place.

If you don't have 5 minutes, do 2 minutes and if you just can't manage to find that time during the day, do it right before going to sleep.  If you can, make a video of your favorite place and put it to music and watch it every day, allowing yourself to completely relax to the sound of the music.  You can also simply be still and sit silently allowing your thoughts to come and go.

Learning to take a few minutes every day to meditate is one of the most powerful things you can for yourself.   Creating a daily habit can relieve stress, help you focus, become more aware, improve happiness and even your overall health.

Be sure to find a comfortable spot and focus on your breathing.  Take deep breaths and allow your body to completely relax.  It may take a little practice, but you will be amazed at how much better you will feel.

Here are some steps to guide you ...

Choose your happy place ...

Begin by taking deep breaths in and then slowly exhaling.

Now imagine your happy place.

What does it look like?

What sounds do you hear?

What colors do you see?

What do you smell?

Hold the image in your mind ...

Close your eyes and think about your happy place and hold that image in your mind ... embrace it ...

I like to picture myself there, happy, smiling, in good health and filled with positive energy and surrounded by love.  I feel completely Blessed and thankful for everything I am, my family and friends and I imagine that feeling and hold it all throughout the meditation and through the rest of my day.  Sometimes if I have a problem I am working on, I can do it there.  Sometimes just being still, allowing no thoughts to enter and simply being quiet and still, is all I need.  Living with gratitude for all the wonderful things in your life is easy.  Living with gratitude for all of your challenges is harder.  The moment you begin to live with gratitude for everything in your life, and look at challenges as life lesson's, it is then that you will begin to feel truly Blessed.  Life is not about living without challenges, life is about learning how to live with them, rise above and be amazing.

Go there 2 minutes every day ...

Here's my video of my happy place ....

Fun at Starbucks trying the new Coconut Milk Latte Vlog

Starbucks rolls out a new Coconut Milk Latte!

My friend and I stopped by Starbucks to try the new Starbucks Coconut Latte.

Check out our video review and let me know what you think of the new coconut milk!  While I wish that Starbucks would have used straight up coconut milk, I am please that there is a gluten free, dairy free option for me now at Starbucks.  There are added fillers and while I would have loved a healthier option, I am still pleased that there is now an option for me!

Please note, there is always a chance for cross contamination at Starbucks, but I have not had any issues with that for myself.  Always check with your barista before ordering your drink because I cannot guarantee the coconut milk will be gluten and dairy free and they can also change their brands at any time.

Gluten Free, Vegan White Bean Peanut Butter Blondies

Peanut Butter Chocolate Chip White Bean Blondies
Recipe by:  GlutenFreeJerseyGirl
Gluten Free, Vegan, Dairy Free, Egg Free, Eat To Live, Nutritarian

These vegan, gluten free blondies are super moist and filled with only nutritious ingredients.  I eat these for breakfast or as a special treat!  Because of the white beans, they are packed with protein which makes this a perfect breakfast food or snack after a workout.   If I didn't tell you, you would not even know there were beans in this recipe.  My blondies are healthy and be warned, very addictive!   I love to create recipes without eggs and flour and wanted to try something different.  I am so happy with how these came out.  Give them a try.  I hope you like them!

Ingredients:

1 can white beans
1 cup pitted dates
1/4 cup apple sauce
1/2 cup peanut butter
2 teaspoons vanilla
1 tablespoon chia seeds
1 tablespoon coconut nectar (or honey)
1 tablespoon cinnamon
1/4 scraped vanilla bean (optional)
dash of sea salt
1/4 cup allergen free dark chocolate chips (I used Enjoy Life)

Directions:

Blend all ingredients except chocolate chips together.
Spread evenly into an 8x8 greased glass dish
Spread chocolate chips over the top and press down into the batter.

Bake at 300 degrees for approx. 45-60 minutes. (Oven times may vary)

Note:  Be sure to cool completely before cutting.

Enjoy ...

I like to have mine with a scoop of frozen banana ice cream and topped with caramel date syrup!

Here's a video of us making the blondies.

Heart Shaped Peanut Butter Cups

A sweet and tasty valentine candy perfect for your favorite chocolate lover in your life.  These peanut butter cups are so easy to make and are so much healthier than some popular ones in the stores.   The secret to getting the best chocolate is to temper your chocolate.

Heart Shaped
Dark Chocolate Peanut Butter Cups
Recipe by:  GlutenFreeJerseyGirl
Gluten Free, Dairy Free, Vegan

Note:  This chocolate needs to be refrigerated...

Ingredients:

1/4 cup cocoa butter
1/4 cup coconut oil
1/2 cup cocoa powder
1 Tablespoon coconut nectar
1 Teaspoon stevia
1 teaspoon vanilla or 1/4 of vanilla bean
dash of sea salt
peanut butter

Instructions:

Melt the cocoa butter and coconut oil.
Add the cocoa powder and stir for a few minutes.
Add sweetener, vanilla and sea salt and continue stirring.
Remove from the heat and stir from a few minutes.
Place back on heat for a few minutes and continue to stir.
Do this several times until your chocolate until it becomes smooth and shiny.

Note: Do not to let your chocolate get hotter than 110F degrees.  You can use a candy thermometer if you want to be sure, however, I did not use one.   Once it reaches this heat is when you will remove it from the heat and let it cool to around 90F degrees and then repeat the process until chocolate is smooth and shiny.
(This is called tempering your chocolate.)

Pour into your candy mold halfway.  Place in freezer for about 15 minutes or until chocolate hardens.

Remove from the freezer and put 1 tablespoon of your favorite nut butter into each heart.  Then fill with remainder of chocolate and freeze for at least 2 to 3 hours or until your chocolate hardens.  Use raw nut butter to keep them raw.

Here's a video making my favorite peanut butter cups!

What a fun day at Monster Jam.  Yesturday was the last day that Monster Jam will be at the Izod Center in New Jersey.  It was a lot of fun, but sad to see them closing.  I am not sure where they will hold Monster Jam in the future, but it was fun to be able to attend several shows there.  As always, the drivers were wonderful and Davey took lots of pictures and got signatures for the Monster Jam Yearbook.

Here's a fun video from our day at Monster Jam ...

Be Thankful Challenge ... Day 18 ... Life's Lessons Along The Way ...

Years ago I started to work for a physician's group and I noticed some patients were, let's just say, grumpy.  I knew it was not personal, but it can take a toll on your spirit after awhile.  I started to notice that little by little, no matter how they treated me, the nicer I was to them, there moods would completely turn around and before I knew it, we had an office full of patients that were so nice, friendly and polite.  I started to make it a game.  I decided that I was going to turn around every patient that walked in the door.  No matter how they treated me, I was going to treat them with kindness.  I smiled, I gave them coffee, I brought toys for the kids and I always took an interest in every one of them.  In 10 years, there was only 1 patient that I could not turn around.  What I realized is when people seem like they are being rude or not being nice to you, it's really because they are just unhappy, in pain or have so many worries that they do not realize how they are acting.  When you are kind over and over, most people do begin to respond to that if it's genuine.  Unfortunately, when someone is rude to us, our initial reaction is to turn away from them or respond back rudely ourselves.

It's tough out there today.  There is so much chaos in the world and stress is everywhere.  It's bound to affect people. So let's all try playing the turn around game.  Next time anyone is rude to you, try to turn them around by being sweet, kind and thoughtful and see how many people you can turn around.  You will make a difference, even if you don't see it.

I have loved doing this "Be Thankful" challenge so much.  It has been such a reminder for me to be thankful every day, no matter what life brings.  This has been quite a challenge for me the past few weeks.  We have to elevate our home because of the damage from Hurricane Sandy.  It took a lot of time to get the process going, and we finally received approval to do it.  Leading up to this, I just accepted that it was something we had to do and did not really focus on it at all.  In fact, until the builder came to our home to plan it out, I had not given it much thought at all.  Once the builder started talking about what they were going to do, I realized, Oh my gosh, we really have to do this!  All these thoughts started coming at me, where are we going to live, how are we going to pay for a mortgage and rent.  Almost everywhere I look, rent is 2,000 dollars a month or more.  Every place I called said they would not rent for just 4 months.  We will have to pay for a storage every month for at least 5-6 months, another added expense.  Then the thoughts of what are we going to do without all our stuff. How will I be able to keep my business going, keep my son from being upset without having all of his things with him, and my husband's stress load from going through the roof, not being able to have a garden this summer?  It all just kept coming at me.  every thought, one after the other.  I couldn't sleep and was in a daze for days.  All I really wanted, was to bury my head and make it all go away.

Then I remembered, what being thankful is really about.  It doesn't mean life is going to be perfect and without challenges.  I really started to think about that over and over.  I remembered this patient from years ago.  He had been injured on his job and by the time he got to our office, he had surgery after surgery and was living in constant pain. Every time he walked into the office, he had the biggest smile on his face.  He would always ask how I was and was one of the happiest people I had ever met.  He was truly inspiring and I never forgot him.  I asked him once how he was so happy living in so much pain.  He told me that he was just happy that he could wake up every day and he just focused on how much he loved his children and his family.  What he did was focus on being thankful for what he had and not what he had lost.  I realized that what I was doing was focusing on how hard this was going to be.  I have no doubt we will get through it as we always do, together as a family.

So what am I thankful for on the 18th day of our challenge?  I am so thankful for my husband and son's strength, that carries me through when I have a hard time.  I am thankful for my State for allowing us to do this to keep our home safe.  I am thankful to all the people who will be helping guide us through this process and I am so thankful to have a home that is filled with joy and love. I am thankful for having such incredible friends who have helped us through everything. I am also so thankful to all of you for continuing to read my blog and following us on this journey...

We now have a few weeks left of our challenge ...  Keep writing what you are thankful for every day and keep working on your journey to be a better person.

Follow the steps below every day ...

Write 3 things that you are thankful for every day ...
Focus on only positive things ..
