Peanut Butter Swirl Black bean Brownies

Peanut Butter Swirl Black bean Brownies
Gluten Free, Dairy Free, Vegan, Egg Free

Ingredients:

1 can black beans (rinsed and drained)
1/2 cup apple sauce
1/2 cup peanut butter
1/4 cup plus 2 tablespoons cocoa powder
1 teaspoon baking ppowder
4 tablespoons agave
1 cup pitted dates
1 tablespoon cinnamon
1/4 of a vanilla bean or 2 teaspoons of vanilla
2 tablespoons chia seeds
2 tablespoons almond milk

2 additional tablespoons of peanut butter for the swirl
1/4 cup dairy free vegan chocolate chips

Blend all ingredients together
Pour into a greased baking dish
Top with 2 tablespoons of peanut butter.
Swirl peanut butter using a knife into the brownie mixture.
Top with chocolate chips and press down into your brownies.

Bake 350 for approximately 40-50 minutes (oven times may vary)

NOTE:  Let brownies cool before cutting.

Gluten Free, Vegan White Bean Peanut Butter Blondies

These vegan, gluten free blondies are super moist and filled with only nutritious ingredients.  I eat these for breakfast or as a special treat!  Because of the white beans, they are packed with protein which makes this a perfect breakfast food or snack after a workout.   If I didn't tell you, you would not even know there were beans in this recipe.  My blondies are healthy and be warned, very addictive!   I love to create recipes without eggs and flour and wanted to try something different.  I am so happy with how these came out.  Give them a try.  I hope you like them!

Ingredients: 

1 can white beans
1 cup pitted dates
1/4 cup apple sauce
1/2 cup peanut butter
2 teaspoons vanilla
1 tablespoon chia seeds
 1 tablespoon coconut nectar (or honey)
1 tablespoon cinnamon
1/4 scraped vanilla bean (optional)
dash of sea salt
1/4 cup allergen free dark chocolate chips (I used Enjoy Life)

Directions:

Blend all ingredients except chocolate chips together.
Spread evenly into an 8x8 greased glass dish
Spread chocolate chips over the top and press down into the batter.

Bake at 300 degrees for approx. 45-60 minutes. (Oven times may vary)

Note:  Be sure to cool completely before cutting.

Enjoy ...

I like to have mine with a scoop of frozen banana ice cream and topped with caramel date syrup!

My Top 10 Gluten Free and Dairy Free Snack Ideas








Ok, so who doesn't love to enjoy snacks throughout the day?  
I love to choose healthy, yet satisfying snacks for myself and my family.

 When first going gluten free, it's so hard to know what is safe to eat.  Here's a list of some of my favorite snacks that are gluten free and dairy free.  I try to choose snacks that will give me a nice boost of energy rather than weigh me down.   High in protein, low in fat and packed full of flavor, my snacks ideas are sure to keep you going all day!  Some of my choices you can easily just throw in your bag on your way out the door, so there is no excuse not to eat healthy when I'm on the go.  I love them for traveling and carry them with me all the time, just in case I can't find a convenient place to eat.  Most of them can be found in regular grocery stores or online at Amazon.  If you order several items at once, many times they are eligible for free shipping.  I can also easily prepare my snacks ahead of time, throw them in a glass container and carry them in my purse.  It really is easy to navigate your way gluten free and dairy free if you are prepared.

Veggies and Hummus

Simply pick your favorite vegetables and hummus.  It's that simple!  There are mini hummus snack packs in the supermarket that you can buy.  Keep cut veggies in baggies in your fridge and that way you can grab a bag and a tub of hummus on your way out the door. 





Ok, so I do not have a favorite on this one - I love them all!  These are a raw food snack company and their products are just delicious. I have only seen them in Whole Foods and Health Food stores but you can also purchase them online at Amazon.

I believe the chocolate flavors have dairy, so I stay away from those.  My favorite Larabar flavor is peanut butter cookie.  These are sold in Target, Supermarkets and online at Amazon.

Peanut Butter Cookie

I love these almond butter packets.  They are the perfect on the go snack.  I took them on a trip to Disney World and take them just about every where I go.  They are sold in most supermarkets now, Target and online at Amazon. You can even buy the cut apple packs in your supermarket and grab that and your almond butter and you have the perfect on the go snack!   His Honey Peanut Butter also tastes amazing and his Dark Peanut Butter Cups are also gluten and dairy free.

Apple Nachos

Slice apples thin using a mandolin 
Arrange on a plate
Drizzle almond butter, coconut butter, cinnamon and melted dairy free dark chocolate 
Enjoy ...




Endangered Species Mini Dark Chocolate Bites

Each bite is under 50 calories, gluten free and vegan.  It's the perfect snack to grab on the go and nice to have as a dessert when you go to a restaurant.  Unfortunately, they will not be selling them in their online store anymore, so you will have to find them in a store or on Amazon.  I have seen them in Shoprite, Whole Foods and my local health food store, so be on the lookout for them.  They taste amazing!

Almond Peanut Butter Coffee Frappacino

** You will need to pour some almond milk in an ice tray and freeze first **

1/2 cup Cold Brew Coffee
1/2 cup almond milk
fill your cup with almond milk ice cubes
1 teaspoon of raw peanut butter. 
 Add stevia, cinnamon and vanilla bean powder to taste 




Chocolate Vanilla Trail mix


Mix approx 10-15 Almonds, small handful of Pumpkin Seeds and Sunflower Seeds in a bowl
Sprinkle cinnamon and vanilla bean powder over the nut mixture and drizzle about a teaspoon 
of melted dairy free dark chocolate. (My favorite is Endangered Species)
Place in the refrigerator for 10 minutes and enjoy!
