Gluten Free, Vegan, Dairy Free, Egg Free, Eat To Live, Nutritarian

These vegan, gluten free blondies are super moist and filled with only nutritious ingredients.  I eat these for breakfast or as a special treat!  Because of the white beans, they are packed with protein which makes this a perfect breakfast food or snack after a workout.   If I didn't tell you, you would not even know there were beans in this recipe.  My blondies are healthy and be warned, very addictive!   I love to create recipes without eggs and flour and wanted to try something different.  I am so happy with how these came out.  Give them a try.  I hope you like them!

Ingredients:

1 can white beans
1 cup pitted dates
1/4 cup apple sauce
1/2 cup peanut butter
2 teaspoons vanilla
1 tablespoon chia seeds
1 tablespoon coconut nectar (or honey)
1 tablespoon cinnamon
1/4 scraped vanilla bean (optional)
dash of sea salt
1/4 cup allergen free dark chocolate chips (I used Enjoy Life)

Directions:

Blend all ingredients except chocolate chips together.
Spread evenly into an 8x8 greased glass dish
Spread chocolate chips over the top and press down into the batter.

Bake at 300 degrees for approx. 45-60 minutes. (Oven times may vary)

Note:  Be sure to cool completely before cutting.

Enjoy ...

I like to have mine with a scoop of frozen banana ice cream and topped with caramel date syrup!

Going Gluten Free

You have to go gluten free, now what?
That is the question most people ask when they find out they have to remove gluten from their diet.

What is gluten?

Gluten is the protein found in wheat endosperm (a type of tissue produced in seeds to be ground into making four). Gluten is found in wheat, barley/malt, rye, spelt, kamut, semolina and oats.  While it is not in the actual oats, they use the same equipment as wheat during processing and can the oats can be easily contaminated with gluten. A gluten free diet is used to treat celiac disease.  Many other disorders may also benefit from removing gluten from your diet.

Symptoms

Some common symptoms of Celiac Disease or gluten intolerance are: diarrhea, abdominal pain, skin rashes, bloating, pale stools, foul smelly stools, weight loss or weight gain, migraines, joint pain and mal-absorption.  I also found that when I removed gluten, if I accidentally got gluten-ed, I began to experience flu like symptoms, dizziness/vertigo and headaches.

Going Gluten Free

Switching to a gluten free diet can be overwhelming, but it just takes some getting used to.  Many grocery stores now carry a lot of gluten free foods now from pasta's, gluten free sauces, gluten free breads and bagels.  You will want to try different brands until you find the ones you like.   You also need to be careful with any type of packaged foods.  For instance, rice may be gluten free, but they may package it up with different spices and use wheat as binders for many products like veggie burgers.  Many TV dinners use soy sauce, which has gluten in it as well.   When buying canned items, i.e. beans, soups and sauces, be sure to check the label for gluten.  I know it sounds like a lot of work, but once you find products you like, it becomes second nature.

First thing you will want to do is to go through what you normally eat and find out which of those items have gluten.  If you eat breads, pasta's and cereals, start there.  I would suggest trying to replace your bread with Udi's breads and rolls, because those tend to taste pretty good.  Keep in mind that they may not taste the same, but your taste buds will adjust.  Be patient and learn to try new things.  If you normally eat sandwiches, maybe try to switch to salads or even make some wraps with a gluten free wrap that you should be able to find in either a grocery store or a health food store.  Plan your meals with things like chicken and rice, and try not to add a lot of packaged foods to your diet.  If you didn't eat cookies before, why are you going to now?  Many of the gluten free desserts are packed full of extra sugar and fat to make them taste good.  Be careful and read labels.  Try to stick with a lot of fruits and vegetables and as much healthy foods as you can.  If your body has been struggling with gluten, then it will need time to heal.  Plant foods are the best medicine for your body and will help you to heal faster.

You have no idea how much better you will feel after you have removed gluten from your diet.  I felt better within days of removing gluten from my diet.  I did not eat a lot of packaged gluten free foods and primarily stayed with whole foods and planned my meals using fresh ingredients.  I found my energy coming back within weeks.  My skin rashes and stomach issues took awhile longer and I also had joint pain, which also took some time.  I would say it took me a good 2 years to finally feel like myself.  During that time, I also eliminated dairy and maple syrup.  I am not going to say that it is always easy.  I do find myself in stressful situations from time to time and have to plan wherever we go what I will be able to eat.  I have my occasional moments of frustration, but when I remember how badly I felt, I realize that it is more important to be healthy and feel well than to eat a slice of pizza that can hurt me.  I realize how many wonderful foods that I have discovered and how good they make me feel.  I know it's hard and it's overwhelming, but find online blogs and groups to help guide you.  Ask a lot of questions and try to embrace your new way of eating.

Other foods to watch out for:  breads, pasta's, salad dressing, packaged rice, tortilla chips, packaged chips and crackers, pretzels, licorice, candy, cereals, natural flavorings, malt vinegar, barbecue sauce, cold cuts, blue cheese, seasoning packets, broth, soups, spices  and sauces.

Green monster smoothie

Green Smoothie Lover Personalized Note Cards available at
http://www.carrieskiddiecloset.com

This smoothie is one of my favorite combinations!  It's super sweet and is packed full of nutrients.  You can customize it any way you like by adding chia seeds, hemp seeds, almond milk, etc.  I love the taste of combining the grapes with the pineapple.  This is definitely a great smoothie to try if you are new to smoothies because the sweetness of the fruit hides the green taste of the kale.   You can also substitute kale with spinach too!  Combine with a handful of pumpkin seeds or 1 of my favorite new Goji lemon muffins  or goji lemon truffles or a spoon of your favorite protein powder.  My favorite is sun-warrior raw vanilla flavored protein powder.

Kale is packed full of nutrients including carotenoids and flavonoids which are 2 powerful antioxidants that protect our cells from free radicals.  It's low in calories, has no fat and rich in vitamin K, iron and fiber. Pineapple and grapes are also packed full of vitamin C and minerals and the combination of all 3 will keep you energized all morning!  Adding a little protein slows down the absorption of sugar and helps to provide a steady energy all morning long.

NOTE:
My dad reminded me to make sure your grapes are seeded!  There are a lot of nutrients in the seeds of grapes - and while I don't like to eat the seeds - I can easily blend them up and get the benefits that way!   I think my dad knows what he is talking about!  He's in his 80's and you would never know it!!

This recipe is gluten free, vegan, dairy free, nut free, paleo friendly and
Dr. Furhman's Eat To Live friendly.

Enjoy ...

Eating Gluten Free at the Freehold Mall

Click here to purchase Fun Shopping Girl Note Cards at Carries Kiddie Closet
My son received a few gift cards for his birthday, so we went on a trip to the Lego Store.  I am so happy they put a Lego Store at the Freehold Mall.  We used to have to drive over an hour just to find one.
`

He made a quick video while looking for Mr. Gold in the Lego Store.

After the Lego Store, we went to the food court to eat lunch.  It can be very difficult for me navigating at a mall, especially being both gluten free and dairy free.  If there is a Wendy's, you can get 2 side salad's with their pomegranate dressing, which is both gluten and dairy free and delicious, but does have a good amount of sugar in it.  There are no croutons on the salad and no cheese, so ordering a couple of them makes a perfect meal.  Their chili is also gluten and dairy free, which is always another option.  I didn't want the extra sugar and wasn't in the mood for chili, so luckily I found an awesome salad place called Turkey and Salad Express that had a bunch of raw veggies and some nuts and seeds.  I ordered a salad with oil and vinegar and it was perfect!

After lunch, we stopped by one of my favorite stores, Sur La Tab, to check out their prices on the Vitamix Machine, which I hope to be buying very soon ...

I found an awesome product that I have not seen before.  Honey apple sparkling Sonoma cider vinegar by Olive Oil in California.  The combination of apple cider vinegar and honey tastes amazing and I can't wait to use this on salads.

My day at the Mall would not be complete without a stop at Starbucks ...
Grande Triple Soy Cappuccino with 1 pump Caramel ... yum!  Now if we could just get Starbucks to start using Almond Milk!!

My husband and Davey took a break
while I was waiting on the very LONG Starbucks line...

After the Mall, we stopped by the Christmas Tree Shop to get another shelf to finish up Davey's Lego organizing in his room.   There was a Spirit Halloween store next door, so we decided to look around.  We had fun looking at all the displays and fun costumes...

We had to stop at 1 more store to find some frames.  We are still working on our house since all the damage we had from Hurricane Sandy...

This was a fun day ending with my favorite new recipe, pineapple teriyaki zucchini pasta stir-fry (recipe coming soon), an awesome soccer game with my 2 favorite boys and Mandy and Davey working on building his new Lego... can't wait to introduce you guys to his new blog, coming soon!

Look for Brick Jedi Master coming soon ...

My son's starting a new blog with product reviews, giveaways,
building Lego's and more...
