Sweet & Spicy Cilantro Lime Quinoa

My newest quinoa recipe is definitely my favorite!
Gluten & Dairy Free


Quinoa is technically a seed and is a complete protein.  It's a perfect food when eating a gluten free or plant based diet and is packed full of calcium, iron, magnesium and fiber.  It's also low on the glycemic index so it won't spike your blood sugar.  It has a nutty taste and chewy texture and works wonderful in so many recipes.  Below is our spicy and sweet quinoa recipe that I love to stuff into a pepper or serve over salad greens.


Ingredients
 
1 1/2 cup organic veggie broth
1/2 cup organic Quinoa
1 green pepper
1/2 white onion
1 teaspoon crushed garlic
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon honey
1 teaspoon stone ground mustard
1 teaspoon chili powder (add more if you like it spicy)
1 tablespoon fresh squeezed juiced orange
1 teaspoon lemon zest
2 Tablespoons fresh squeezed lime juice
2 tablespoon crushed cilantro
1 teaspoon nutritional yeast (optional)
1/2-1 teaspoon salt
 
Add any additional vegetables you would like.  We added broccoli to ours served stuffed into a pepper and topped with fresh cilantro! 


 
Directions
 
Bring 1 1/2 cups vegetable broth to a boil
Add in all spices
 
Rinse 1/2 cup Quinoa and add to vegetable broth and spice mixture -
turn down heat to low
 
cover and cook until quinoa is soft (approximately 20-30 mins),
stirring occasionally.
 
Add in your vegetables and add additional water or vegetable broth if necessary.
 
Once quinoa and vegetables are soft, serve over kale, salad greens or scoop out a pepper and serve it that way.  Either way you serve it, this dish is delicious!  This quinoa comes out so cream and tasty and is a perfect compliment to the raw kale salad.
 

 We added a side of Tuscany Kale that we squeezed some fresh orange juice over and sprinkled some sesame seeds on top.  We then added a few fresh orange slices.
