Vegan Chocolate Coffee Ice Cream

This vegan chocolate coffee ice cream is super tasty, low in calories and fat and only a few ingredients! It tastes more like chocolate ice cream and is such a nice treat!

Ingredients:
1 1/2 cup ice
1 packet of instant decaf coffee or regular
1 small date
Small piece of frozen banana (about 1/3 of medium sized banana)
2 to 3 packets of stevia
1 heaping tablespoon unsweetened cocoa powder, preferably raw
2 heaping tablespoons PB Powder
1/2 cup unsweetened Almond Milk +
A few small pieces of vanilla bean (or 1 teaspoon vanilla)
Directions:
Place all ingredients in your blender.
I used a vitamix and if you are using a regular blender, you may need to add more almond milk to help it blend. Please note, it may not be as firm using a regular blender.
Add a little extra almond milk if you need it.
Enjoy ...
I topped mine with a drizzle of peanut butter!
